Vegan Banana Coconut French Toast

A vegan breakfast perfect for a Saturday morning. My daughter and I gobbled it up and she wanted more. What made this particular go at banana coconut french toast special was that we started with home made no knead bread left over from the day before.

Banana Coconut French Toast

Ingredients:

8 slices of bread

1 banana

Coconut Milk from a can 1/2 cup

Almond Milk 1/2 cup

Cinnamon 1/2 tsp

Nutmeg 1/4 tsp

Vanilla 1/2 tsp

Sugar in the raw 1 tbs

Oil for frying

Directions:

Put all ingredients except for bread and oil in food processor and blend until smooth. Poor mixture into a shallow bowl. Heat a couple of tbs of oil (I use grape seed oil or coconut oil) in your favorite cast iron skillet. Dunk bread covering both sides into banana mixture. Fry until golden brown, flip and fry the other side.

Drizzle with real maple syrup. YUM!
